ATP! Presents: Brittany Has An Appetite (August 30th, 2012)
Anyone who follows drummer Brittany Harrell (@brittanyharrell) of Georgia's pop-punk outfit, Veara on Twitter would know that her account is comprised of talk about WWE, music and things 99% food related. With that said, we invited Brittany to be a part of the Alter The Press team where each week, she will be writing a weekly blog talking about the best meals she has consumed and letting the world know about her love of food!
My band Veara just finished tracking for our new Record up in New Jersey with Dan Korneff at House of Loud Studios (this record is going to be AWESOME by the way).
My mom has been asking me what meal I would like her to cook for me for my first meal back home. The first thing that popped into my mind was the Pork Tenderloin we do sometimes and of course my favorite side she makes: Cheesy, Garlic, Ranch, Italian Potatoes!
My mom and I went to the grocery store to pick up the pork tenderloin and marinade the night before (she already had all the other ingredients at home). That night we injected it with a "hot and spicy butter" marinade and used "cajun shake" all over the outside of it. The pork tenderloin went into the fridge to marinate and suck up all the juices over night.
The next day around lunch time we put the pork tenderloin into our "Big Easy" oil-less fryer to cook. This cooker slow cooks the meat and in about 2hrs it was done!
While the tenderloin was cooking my mom peeled the potatoes and put them on the stove to boil to get ready to mash. Once it was time for the tenderloin to come out, she poured off the excess water that the potatoes were boiling in and mashed them up! In the potatoes she put cheddar and jack cheeses, milk, butter, sour cream, chives, ranch seasoning, garlic and wine seasoning, pepper, and Italian seasoning.
For a vegetable to go with the meal, My mom also prepared Green Beans! In the green beans she seasons them with goya, garlic and wine seasonings, and cooks them with a ham-hock in there as well.
This meal was SO AWESOME!! The Pork Tenderloin was juicier than ever and cooked to perfection. We had never tried the hot and spicy marinade before, but it was a hit! We all gobbled up the pork quick! The potatoes were so friggin' good! This is my favorite side that my mom makes. I always say these potatoes are like crack because once you take one bite you're hooked. They're hard to stop eating! They were very creamy and cheesy. The flavor is so good that it's seriously something you have to experience to get the full affect of just how good they are. The green beans were awesome as well! My mom has the best green beans Ive ever had. These were on point too!
I ate two plates because it tasted so awesome!
We had some left overs and we all them the next day for lunch. It was just as good the next day, haha.
