ATP! Presents: Brittany Has An Appetite (August 22nd, 2012)
Anyone who follows drummer Brittany Harrell (@brittanyharrell) of Georgia's pop-punk outfit, Veara on Twitter would know that her account is comprised of talk about WWE, music and things 99% food related. With that said, we invited Brittany to be a part of the Alter The Press team where each week, she will be writing a weekly blog talking about the best meals she has consumed and letting the world know about her love of food!
Jerry Farley is helping out with engineering some stuff on my band Veara's new record. He had talked to us about this dish he makes called "Mexican Lasagna". It's a lasagna but you replace all the ingredients for a regular lasagna with Mexican ingredients! That's how you get the "Mexican Lasagna"!
Jerry said he first made a vegetarian chili. That had onions, two alarm chili mix, cayenne pepper, peppers and jalapeños, and fake meat in it. He simmered all that until it was done.
He cooked the lasagna pasta and then began to assemble his lasagna. I'm not quite sure what was the exact order of the layers but the whole lasagna had all of these following ingredients:
Lasagna pasta, vegetarian chili with the onions, peppers and jalapeños, black and pinto beans, cheese, salsa, and some olives. He also brought sour cream to top the Mexican lasagna with.
This thing was great!! Of course I made sure to top my Mexican lasagna with plenty of sour cream (I love me some sour cream on Mexican food!). In fact it was so good that I had not one, not two, but THREE total pieces of it! The idea of fusing a lasagna with Mexican food is such a great idea. You get all of your great Mexican ingredients baked into a hearty pasta dish. So cool!!
